Easy Homemade Vegetable Broth Recipe

Using a blend of fresh, natural ingredients, this delicious, flavorful broth can be enjoyed on its own or used as the foundation for crafting soups, stews, and recipes that call for broth.

Serves 8

Ingredients (organic/biodynamic)

  • 1 red onion
  • 2 carrots
  • 2 celery stalks
  • 1 leek
  • 3 cloves garlic, smashed
  • 1 bay leaf
  • 1/2 tsp. whole peppercorns
  • Handful of fresh parsley
  • 8 c. water
  • Celtic Sea Salt®, to taste

Instructions

  1. Roughly chop onion, carrots, and celery stalks and place in a large stockpot.
  2. Slice the leeks, and add them along with the garlic, bay leaf, peppercorns, and parsley.
  3. Add 8 cups of water, or enough to cover the vegetables. Stir to combine.
  4. Simmer on stove for 45 minutes to an hour.
  5. Strain the broth through a fine-mesh sieve or cheesecloth into a bowl or another pot.
  6. Add Celtic Sea Salt to taste.
  7. If you are serving as broth, ladle into small bowls, garnish with fresh parsley, and enjoy!
  8. To store for future use, allow the broth to cool, and transfer to Mason jars or other sealed containers for storage.
  9. Use the homemade veggie broth as a base for soups, stews, or any recipe that calls for broth.
