Ingredients (all organic/biodynamic):
Vegetables/fruit – all roughly chopped
1 medium onion
1 small butternut squash, de-seeded
2 medium carrots
4-5 ribs celery
½ apple
Herbs & Spices
½ c. fresh basil
1 tsp. cumin powder
1-2 cloves
1-2 whole peppercorns
1 bay leaf
½ whole dried cayenne pepper (optional)
Celtic Sea salt to taste
Water (or vegetable stock) for cooking
Directions:
- Place all chopped vegetables and apple into a saucepan and cover with water (or vegetable stock) and bring to boil.
- Reduce heat, cover, and simmer.
- Once half cooked, add the dried spices and mix well.
- Simmer until the vegetables are well cooked.
- Add all the fresh basil (except for a few leaves) at the very end – just before turning off the stove.
- Blend the cooked vegetables and basil to a smooth consistency in a high performance blender like a Vitamix®, adding more water or vegetable stock as needed.
- Transfer back to the saucepan. Adjust final consistency with water or vegetable stock and bring to boil right before serving.
- Serve hot and garnish with a few basil leaves.
- Enjoy with your favorite oil-free salad or grain-free side.
