Garlic-Infused Oil Free Green Bean Almondine Recipe

Serves 4-5

Ingredients (organic/biodynamic)

  • 1 pound green beans, trimmed
  • 1/2 cup slivered almonds
  • 2-3 cloves garlic, minced
  • 1/4 cup vegetable broth or water
  • Pinch of Celtic Sea Salt®
  • Black pepper to taste
  • Lemon wedges for garnish (optional)

Instructions

  1. Bring a sizeable pot of water to a boil, and have another bowl filled with ice water ready.
  2. Cook the green beans in the boiling water for 2-3 minutes. They should look bright green and be a little tender.
  3. Drain the beans and place them in the bowl of ice water to cool.
  4. In a pan, toast the almonds over medium heat for 3-4 minutes until golden, carefully stirring so the nuts will not burn.
  5. Add the garlic and a small amount of vegetable broth or water, and sauté for about 1-2 minutes until fragrant.
  6. Drain the green beans and add them to the pan with the garlic and broth mixture. Stir to coat and cook for another 2-3 minutes allowing the beans to heat through.
  7. Add salt and black pepper to taste. Add remaining vegetable broth or water if the pan gets too dry.
  8. Remove from the heat when the green beans are cooked through and coated to your liking, and transfer to a serving platter.
  9. Sprinkle toasted almonds over the top, and garnish with lemon wedges.
  10. Enjoy!
