Sugar-Free Cranberry Sauce with Dates

Serves 5-6

Ingredients (organic/biodynamic)

  • 1 bag of fresh cranberries (12 oz.)
  • 1 cup water
  • 6 Medjool dates, pitted and chopped (can use more if needed)
  • 1 teaspoon. orange zest
  • 2 Tablespoons fresh orange juice
  • Pinch of Celtic Sea Salt®

Instructions

  1. Add fresh cranberries and water to a saucepan and cook over medium heat.
  2. Add the Medjool dates (start with 6 and add more if needed, to taste).
  3. Bring the misture to a boil, then reduce heat to a simmer.
  4. Add the orange zest and fresh orange juice to add a burst of citrus to the sauce.
  5. Simmer for 10-15 minutes, stirring occasionally. The cranberries will pop and the dates will soften, creating a thick sauce.
  6. Adjust sweetness, if needed, with additional dates.
  7. Add a pinch of Celtic Sea Salt for balance.
  8. Remove cranberry sauce from the heat and allow to cool and thicken. If it becomes too thick after chilling, you can thin the mixture with a splash of water or orange juice.
  9. Transfer the cranberry sauce to a serving dish.
  10. Serve it warm or chilled.
